No-fail Cod en Papillote

Need a go-to recipe that will 'wow' your guests, but is also super easy? This Cod en Papillote is so simple yet elegant, and can be prepared ahead of time. Then all you need to do is pop it in the oven leaving you free to join the party. It's also great for a weeknight fix when you need a quick dinner with minimal cleanup.

The term 'en papillote' refers to a technique of wrapping in paper or foil to cook. This packaging creates steam, resulting in a simple and delicate way of cooking its contents. My instructions below are just one way of filling the package, but feel free to make substitutions. For example, you can use thin slices of zucchini in place of, or in addition to, the tomatoes. Throw in black olives, peppers, garlic and oregano if you prefer. Tarragon, capers and a pat of butter would be divine. Use your imagination, or whatever you have on hand. The only rule of thumb is your ingredients must have a similar cooking time.

INGREDIENTS:

2 lbs. cod loin cut into 4 filets

1 medium/large shallot sliced

2 lemons

1 Pint cherry tomatoes

1 Bunch fresh thyme

1 Bunch fresh flat leaf parsley

Dry white wine

Olive oil

Salt and Pepper

Parchment paper (I like these precut sheets.)


PREPARATION:

  1. Preheat oven to 400° Fahrenheit.

  2. Lay out 4 parchment sheets, and build contents. Start with shallots, then cod, then lemon slices.

  3. Add splash of white wine and olive oil, about 1-2 TBSP each.

  4. Salt and pepper to taste.

  5. Add pile of herbs - a few sprigs of thyme and about 2 tsp chopped parsley to each.

  6. Fold parchment over the contents, and start folding from one end. Continue to fold parchment over itself as you move around the cod forming individual packages.

  7. Place packages on rimmed baking sheet, and bake for 15 minutes. Note: time may vary slightly depending on thickness of your fish.

  8. Carefully open packages and slide contents onto plate.

  9. Serve with roasted potatoes and lightly dressed arugula salad if desired.
