Beth's Famous Granola

Of all my recipes, this might be the most requested. It's simple, customizable, and just darn delicious!

Makes 7 Cups Granola

Prep Time 10 minutes

Cook Time 22-25 minutes


INGREDIENTS:

4 Cups Rolled Oats (gluten-free if desired)

2 Cups raw nuts

1 Cup chopped almonds

1/2 Cup pecan pieces

1/2 Cup pepitas

1/4 Cup seeds

1/8 Cup chia seeds

1/8 Cup flax seeds

1/2 Cup maple syrup (I like dark)

1/2 Cup coconut oil melted (I like organic, refined)

1 tsp kosher salt

1 tsp vanilla extract

1/4 tsp cinnamon



PREPARATION:

  1. Preheat oven to 350° Fahrenheit and line jelly roll or 9"x13" baking pan with parchment paper.

  2. Combine all ingredients in large bowl and mix well.

  3. Pour into parchment-lined pan. Press ingredients into pan by using bottom of measuring cup.

  4. Bake 22-25 minutes until golden brown.

  5. Let cool completely, at least 1 hour. Break into pieces and store in airtight container.

VARIATIONS:

Note: Add dried fruit after removing from oven, but while still warm.

  • Dried pineapple and coconut flakes.

  • Cranberries and orange zest

  • Raisins and m & m's

  • Apricots and sub cashews for the pecans

  • Chocolate chips
