Not-so Caesar Salad

Are you a fan of Caesar salad but intimidated by the traditional preparation? This is the recipe you've been waiting for!

I love a good Caesar salad, and I truly appreciate an expertly crafted one. But, I wanted a go-to solution that I could throw together at a moment's notice to satisfy my craving at any time. And you all know that if I have salad dressing already made and lettuce pre-washed, I'm much more likely to eat salad. This is key for hot summer days, and perfect for a crowd. Top with your favorite protein like grilled chicken or salmon and you've got an easy dinner.

Makes 1 Salad

Preparation time 15 minutes

Dressing preparation time 10 minutes


INGREDIENTS:

Not-so Caesar Salad

Romaine lettuce washed and patted dry

Parmesan cheese, shaved (grated will work)

Not-so Caesar Dressing

Fresh-cracked pepper (optional)


Not-so Caesar Dressing

1/4 Cup mayonnaise

6 Tbsp Greek yogurt

2 Tbsp olive oil

1 lemon (juiciest you can find)

2-3 cloves garlic depending on size and preference

2 tsp Worcestershire sauce

1 tsp Dijon mustard

2-4 Tbsp grated parmesan cheese

1/2 tsp fine sea salt

Pepper to taste

PREPARATION:

Not-so Caesar Salad

  1. Chop romaine lettuce and add to bowl.

  2. Top with croutons*, shaved parmesan and dressing.

  3. Toss and enjoy!

Not-so Caesar Dressing

  1. Combine all ingredients in small bowl.

  2. Taste and adjust to your preference. (You should always do this.)

  3. Store in airtight container for up to 10 days.

A note about substitutions. You can use vegan mayonnaise in place of conventional mayo. You can also substitute 1/2 Cup sour cream for the greek yogurt and olive oil. I have not tried to substitute plant-based yogurt or plant-based sour cream, but I think it could work.


Tip - if you don't like that initial bite of raw garlic, make this one day in advance.


*For homemade croutons, cut the end a loaf of sourdough bread into cubes. Toss in olive oil, salt and pepper. Toast until brown and crispy.
