Pineapple Jalapeño Margarita

Who's ready for the weekend? Well, let's get to it then!

With warm weather on the horizon, this refreshing drink is sure to be on heavy rotation. We might even call it healthy... well, at least not so un-healthy. Pineapple is loaded with benefits from boosting immunity to reducing inflammation (read more here), and jalapeño is a fruit that feels like a vegetable so I'm feeling good about this one.

Makes 1 Serving

Prep time 5 minutes


INGREDIENTS:

1.5 oz. pineapple simple syrup (recipe below)

1.5 oz. tequila of choice

1 jalapeño

Fresh pineapple chunks

Lime (optional)

PREPARATION:

  1. Place a few fresh pineapple chunks and 3 slices of jalapeño in bottom of double old-fashioned glass and crush well. I muddled with the end of a cocktail spoon, but you can also use a muddler or the end of a wooden spoon.

  2. Fill glass with ice.

  3. Add pineapple spa water, pineapple simple syrup, tequila and stir well.

  4. Add squeeze of lime if desired.

  5. Garnish with pineapple chunk and additional jalapeño slice.

NOTE: For a less spicy version, remove seeds from jalapeño.


PINEAPPLE SIMPLE SYRUP:

Combine 1 Cup sugar and 1 Cup Pineapple Spa Water in a small sauce pan. Heat on low until all sugar has dissolved. Cool and refrigerate for future use.
