My friend introduced me to "spa" water this year - take whatever fruit you want, add it to a pitcher of water & keep it in the fridge.
This Pineapple Spa Water is crafted more like a tea, but still flavored water. Spa water just sounds better, don't you agree? Drink it over ice as is, or use it for mixology. You decide!
Makes about 4 Cups
Prep Time 10 minutes
Cook Time 1.5 hours
INGREDIENTS:
1 Pineapple (organic preferred)
Water
PREPARATION:
Thoroughly wash pineapple. I use a sponge and the tiniest bit of dish soap. Alternatively, you can use vinegar. Rinse very well.
Cut pineapple and add side pieces and core to a medium sized sauce pot. First cut the bottom, then sides. You will include the core, but discard the top and bottom. (Reserve the remaining pineapple for eating.)
Cover pineapple pieces in pot with water and bring to a boil. Immediately turn flame down to simmer, and simmer for half hour.
Remove pot from heat, cover, and let steep for one hour.
Strain into canning jars, and discard used pineapple.
Refrigerate.
NOTE: Use this pineapple spa water to make simple syrup and my favorite Pineapple Jalapeño Margarita.
