Urfa Biber Cashews

Need something to hold you over until dinner? This little snack comes together in just a few minutes. Pair with your favorite cheese and a glass of wine, and say goodbye to the hangries.

What is Urfa Biber anyway? Also known as Urfa pepper, this chile pepper comes from the Turkish town of Urfa. It is known for its distinctive dark burgundy color and smoky sweet flavor. Learn more about it here. Once considered an exotic ingredient, it is now easier to find. I like the one from Spice House, and have also found it on Amazon.

Makes 4 Servings

Prep time: 2 minutes

Cook time: 5 minutes


INGREDIENTS:

1 Cup raw cashews

2 TBSP honey

1 TBSP butter (may substitute olive or coconut oil)

1 tsp Urfa biber

1/2 tsp Spanish paprika (any paprika will work)

1/4 tsp kosher salt for cooking

1/4 tsp flaky salt for finishing


TOOLS:

Small sauté pan, parchment lined tray

PREPARATION:

  1. Gather all ingredients and tools before starting. This comes together quickly.

  2. Melt butter in pan over medium/low heat.

  3. Add cashews and dry seasonings to pan. Stir to coat.

  4. Add honey.

  5. Cook until honey thickens and cashews turn golden brown (2-3 minutes).

  6. Place on parchment lined sheet and finish with flaky salt. Let cool a few minutes before eating.

  7. Enjoy!
